So when I got on to O'Reilly, I was like a kid in a candy store. There are playlists. There are answers. There's on-demand training. It's worth its weight in gold, in terms of what it allows me to do.

デイブ・アーノルド（Dave Arnold）は
ラジオ番組「Cooking Issues」のホス
トであり、『Liquid Intelligence』（ Norton,
2014）の著者でもある。彼は以前、ニュー
ヨーク市にあるフレンチ・カリナリー・
インスティテュートで学生たちに最新の
テクニックと機器の使い方を教えていた。

もともとそういう考え方に慣れていない
人が、自然とそのようなことをし始める
とは期待できない。そのような人たちに
は、キッチンで作業するための別の道具
を与えればよいのだ。彼らが当然と考え
ていること、例えば卵をゆでることを取
り上げて、それを無数の小さな部品に分
解して見せるのだ。そして、単一変数を
操作するための表を作る。つまり、表の
フォーマットで例えば時間と温度という
2つの変数を一目で見渡せるようにして、
一方の変数を操作すると他方にどう影響
するかを理解するのだ。
